Protein Power Rainbow Quinoa Salad
Oh She Glows Everday by Angela Liddon is one of my favourite cookbooks, and this salad is one of my go- to recipes. I love having this on hand in the fridge for a quick healthy lunch, it stays fresh (undressed) for days and is both hearty and healthy. Quinoa, chickpeas, hemp hearts and kale are great sources of protein. It packs well to take on a picnic or to a potluck. If you find kale too chewy or strong, try replacing some of the kale with some chopped spinach as an alternative. Click on this link for the recipe. Enjoy!
